Pistachio-Basil-Lime Butter (for fish)
This is an intense, richly flavored paste that is used as a rub for baking or broiling salmon or other strong-fleshed fish.
- 1 cup pistachios, shelled
- 1/4 cup of Basil leaves (more if you wish)
- 5/8 stick of butter, cut into tablespoons
- 1 clove garlic
- Juice and zest of a lime
- Salt to taste
In a food processor, grind the pistachios. Add the garlic and basil, and pulse again. Add the butter, one tablespoon at a time. Add the lime juice and zest. Season with salt to taste.
Spread the finished paste directly onto the salmon (or other sturdy) fish. Wrap in parchment paper, place on baking sheet, and bake at 350 degrees until cooked through (about 30-40 minutes, depending on the size of the fish).
