Grandma Evie's matzah apple kugel


12 matzahs

6 eggs

1 teaspoon salt

1 cup sugar

1/2 cup butter or margarine [1 stick], melted

2 teaspoons cinnamon

4 large apples, peeled, cored and chopped

1 cup golden raisins  [optional]



  1. Break up matzohs into pieces [roughly 1-2 inches]

  2. In large bowl, soak matzo in hot tap water for 3-4 minutes to soften, and drain off water

  3. In medium bowl, beat eggs, and add salt, sugar, melted butter, cinnamon

  4. In large bowl, combine matzah pieces and egg mixture. Add apples and raisins and combine,

  5. Put in baking pan [13"x9"] and bake 350* until hot and firm. Depending on oven: 30-60 minutes.

  6. Easy to make a day ahead. Cut when cooled, refrigerate, then microwave to heat it.
